In the Spring around this time when the days are so busy with my kids sports and we are just trying to make it to the end of the school year, I usually end up in a routine rut for breakfasts and all meals in general.  Let’s face it, everybody’s tired and creative cooking just isn’t a top priority.  But I have one great one in my back pocket that makes everybody happy including me.



Gorgeous and puffy, they smell as great as they look.  They are delicious!  And warm, and yummy and comforting and …..mmmmm.  Popovers can get even the toughest kid to wake up out of bed just by their smell.

We just add some butter and jam and my kids LOVE them.

I have a popover pan because over the years I got one for Christmas but you can bake them in a muffin pan too.

I guess they got their name because they pop so high and get “popped” into the mouth so fast. Truly, these are so easy that even if you never cook, you will look like a total hero with these.

Here’s my recipe for some popover love to give you a boost out of the breakfast rut:

Preheat your oven to 400 degrees F.

2 Eggs

1 Cup low-fat milk (I use whatever milk we have)

1 Cup sifted unbleached all-purpose flour

2 teaspoons granulated sugar

1/4 teaspoon salt

2 Tablespoons butter, melted

Combine all the ingredients except the butter in a mixer or with a wire whisk.  Stir in the melted butter.  Pour into well buttered popover pan or muffin tin, filling about half full.  Bake until golden brown and puffed up, about 35 minutes.

(This is actually a long cook time for a school morning so if I make them during the week, I mix the dry ingredients the night before and cover them on the counter and add in the wet ones in the morning.  Then have coffee while they rise!)

Once they are out of the pan, they can be pulled apart and they deflate but they are warm and light and yummy.

I actually took these photos as an afterthought in the middle of making them for my kids.  Pardon our mess but we had to dig in!
